WENDY'S RECIPES #3: HAINAN CHICKEN

While it's no secret that Humberto's mom, Wendy, is one of the most talented and inventive chefs around, her recipes have been the best kept secret... Until now! In her very own series here on the KENZO blog, Wendy will be sharing some of her amazing original recipes for us!
Wendy's Hainan Chicken recipe has perfected that coveted blend of incredibly delicious and flavorful with super light and healthy. Here's how to make it for yourself:

Bring large pot of water, large enough to fit a whole chicken and with enough water to cover the chicken, to a boil.
Slow boil the chicken for 10 minutes.
Cover the pot, turn off the fire, and let it sit for 40 minutes.
Then cut up the chicken to desired serving size.


 

Sauce:
Peel and slice the ginger into pieces small enough for the food processor.
Slice green onion stems small enough to fit into food processor.
Mix green onion stems, peeled garlic and ginger into food processor and pulse until ground.
Sautee slightly in olive oil, sugar and salt.

 

Serve the sauce and chicken separately and let people put on their desired amount as they eat it!


 

Ingredients:
1 whole raw chicken
1 pot of water
1 bundle of green onions (5 pieces)
1 large piece of ginger
1 tsp. olive oil
2 cloves peeled garlic
1 tsp. sugar
1 tsp. salt
