To us, little meringues look like mini-clouds.
Here's how to make them look like our favourite mini print...
4 egg whites, 250 g (1 cup) white sugar
Preheat the oven to 120°C (250°F).
Place the egg whites in a mixing bowl and add a pinch of salt. Beat the egg whites until stiff.
Add the sugar to the egg whites gradually, while continuing to beat.
Immediately drop by the spoonful (any size or shape) onto a baking sheet covered with parchment paper.
Bake for between 30 min and 1 hour at 120°C (250°F).
After 30 minutes, the meringues will be white and soft.
After one hour, the meringues will be pinkish, crunchy, melt-in-the-mouth with a soft center.
Lift the meringues delicately off the baking sheet as soon as they are removed from the oven and let them cool.
